JOB DESCRIPTION

Job Brief

We are UMAYA Parramatta, a Japanese restaurant in the heart of Parramatta NSW and were looking for Hot food and Sushi / Sashimi team members for our kitchen staff

 We are looking for energetic, vibrant and motivated staff to help us in the Kitchen by giving excellent service and products to our clients, adding to the restaurant's ambience and character. UMAYA Parramatta serves quality Japanese food, and therefore it would help if you have previous knowledge and or interest, at the very least, in Japanese food culture. We are willing to work with you depending on your experience and capabilities. Having previous comparable skills and experience in Asian/Japanese cuisine, as well as working in this type of environment, would be advantageous. We are willing to work with you and train you and skill you up

Responsibilities include handling a wide range of raw fish and other ingredients, managing food stock and working with attention to detail to fulfil all orders within quality standards.

To be successful in this role, you should have experience with Japanese cuisine and be available to work/train during our opening hours as part of rostered shifts.

Ultimately, you will help us establish and grow our reputation as one of the best sushi places in the area and increase our clientele.

You need to

  • Work in a group and as part of a team.
  • Willingness to work Monday to Friday, Saturday and Sundays as per roster (Lunch and dinner shifts)
  • Availability to come to Parramatta store for an interview or training

Responsibilities (not limited to)

Under the head chef's and management's direction, responsibilities include but are not limited to the areas below.

  • Create items from social media-worthy sushi, sashimi and hot Japanese food menu with various main ingredients and raw fish and meats (for example, salmon, tuna, unagi, wagyu beef and chicken)
  • Prepare all types of sushi, including maki, nigiri and sashimi
  • Select fresh vegetables to make high-quality dishes (like avocado and carrots)
  • Add additional flavours to sushi rolls with ginger, rice vinegar, wasabi and soy sauce, when appropriate
  • Manage food prep activities, like boiling rice, cutting fish and meat, marinade of meats preparing fish for use, portioning stock
  • Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies
  • Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine
  • Monitor food stock and place orders as needed
  • Preparations and portion control
  • Plating and presentation of meals
  • Recommend new, modern recipes, and other ideas and concepts
  • Assistance with the development of processes and practices in store and supporting of other team members and trainees
  • Maintain hygiene principles in all cooking areas and clean your space at the end of the shift
  • Cleaning and pacing down after service

Requirements

  • Work experience as a Sushi, sashimi and hot food team member or at an Asian restaurant with similar experience
    • Preference for sushi/sashimi creation advantageous
  • Good knowledge of various sushi types and sushi-rolling techniques
    • Our products are freshly made onsite and hand-rolled for more extraordinary taste and quality
  • Ability to work both fast and accurately and independently as required
  • Team spirit, You have a willingness to learn & take pride in what you do
    • we will embrace your creativity
    • You're always trying your best and love mastering new skills/hobbies
    • You have initiative - you're always looking for what to do next
  • Availability to work during business hours, including weekends and evenings
  • Flexibility to take on various shifts over multiple days, including weekend shifts as per roster
  • Certification from a culinary school is a plus
