Are you looking to work and reside in the world’s largest living rainforest? Well, we are looking for the newest Sous Chef to take the lead on our ever-growing team at the Daintree Ecolodge.

Here at the lodge, we are incredibly passionate about sustainability and protecting native flora and fauna. You would be working in a property that houses 15 eco-friendly bayans (treehouses), a day spa and the dining restaurant, that would become your sanctuary. We have a very strong system based fundamentally around local produce and sustainable kitchen practices, such as nose to tail with minimal waste. We are looking for someone who houses all of these philosophies and who wants to create menus and dishes that live up to our code of sustainability. In saying that, we are also looking for simplicity throughout our dishes and dining experiences. We thrive on attention to detail and a uniqueness in creativity within menu development. We would require you to come up with signature dishes that will leave our guests satisfied beyond measure. The technique mandatory will be that of a seasonal Sous Chef with a background in high-end boutique establishments. Between our supportive management team and our ever-growing client base, you will be encouraged and supported to express yourself like never before.

Our restaurant caters for in house guests but also provides service for the public in addition so your talent will excel outwardly from the predominant lodge clientele. As we prepare to reopen for the season your management team will be there to support and encourage you into this role and help you every step of the way. Meeting our guests’ expectations is a must but to exceed them is the ultimate goal of our Sous Chef expectation here at the Daintree Ecolodge. If you are passionate about sourcing local produce, native bush tucker and sustainable environmental practices then look no further. REQUIREMENTS

Chef Responsibilities

As a highly talented and passionate Chef, you will create daily changing menus that wow our guests.

  • Experience within a similar standard of kitchen
  • Experience in daily changing menus
  • Ability to work autonomously
  • Supportive and strong team player
  • Exceptional time management and organisational skills
  • Previous experience in a high-end boutique and or similar restaurant style is highly favourable
  • Must be trade qualified
  • Excellent technical knowledge and experience in all cooking techniques and style
  • Highly expereinced in presentation and plating techniques
  • Seasoned in humidity / monsoon rain and heat

Qualifications

  • 5 years boutique kitchen experience 
  • Must be trade qualified
  • Proven to provide service to a minimum 30 guests in one seating
