Full time Salary

$70,000 – $80,000 per year

Pincho Disco is Collingwood’s bold and buzzing Latin American-inspired restaurant and bar. With an electric atmosphere, live entertainment, vibrant share plates, and cocktails that pack a punch, we’re on the hunt for a dynamic and experienced Restaurant Manager to lead our passionate front-of-house team.

Position Summary

Position Title: Restaurant Manager
Salary Range: $70,000 – $8,000 plus superannuation], depending on experience
Employment Type: Full-Time, salary
Location: 59 Cambridge Street, Collingwood, Melbourne
Hours of Work: Minimum 38 hours per week (shift work, including weekends and public holidays)

REQUIREMENTS

Key ResponsiKey Responsibilities

Lead, inspire and manage the FOH team to deliver high-quality guest experiences

Drive service standards aligned with Pincho Disco’s energetic and premium brand

Manage staffing, training, and performance across front-of-house operations

Oversee daily service operations including reservations, rosters, and guest flow

Work closely with the head chef and bar manager to ensure smooth coordination

Monitor and report on service KPIs, customer feedback, and operational improvements

Maintain RSA and OH&S compliance standards

Support business growth and profitability with hands-on leadership

Who You Are

Minimum 2 years’ experience in a Restaurant Manager or FOH leadership role

Background in premium, high-volume hospitality venues

Exceptional communication, leadership, and guest service skills

A calm and confident problem-solver, even in a fast-paced environment

Proven ability to train, lead, and retain a high-performing team

Strong understanding of operational systems (POS, rosters, stock control)

Hospitality qualifications (Certificate IV or above) highly regarded

Valid RSA (Responsible Service of Alcohol) certification
