About this opportunity

A rare opportunity has arisen for an experienced Chef De Cuisine to effectively manage and lead our talented team of chefs in Arakawa Japanese Restaurant.

Our chefs create traditional Japanese dishes made from high quality produce and ingredients to deliver exceptional and memorable food experience to our guests. Arakawa offers enticing dining options including intricately hand-crafted sushi, traditional à la carte dishes and the thrills of teppanyaki tables.

Reporting to our executive chefs, you will assist in managing the overall operation of Arakawa. Duties will include:

  • Lead, delegate and support a team of chefs with a ‘hands on’ approach to deliver a high standard of product and service
  • Train, provide feedback and manage staff performance & leave
  • Being innovative, passionate and enthusiastic for hospitality and service to deliver exceptional food experiences for our guests
  • Build positive working relationships with internal & external stakeholders
  • Identify opportunities to improve services, productivity & efficiencies
  • Support the business commitment to sustainability & WHS
  • Comply with hygiene standards & company policies & procedures
  • Manage stock, report and ensure budgets are acheived

RACV Royal Pines Resort is open 24 hours per day, 7 days week. Arakawa is open of an evening from 5.30pm. Our team work a 7 day rotating roster, including evenings, weekends & public holidays.

RECOMMENDED SKILLS/EXPERIENCE

Head Chef

Please note: You should have a minimum up to 2 years previous experience in the above or similar roles.


REQUIREMENTS

  • Certificate III in Commercial Cookery qualification, essential
  • Experience in a CDC or similar position in a 4/5 star hotel/resort operations
  • Extensive knowledge in Japanese cuisine cookery technique and skill, essential
  • Extensive knowledge of stock rotation, procedures, cooking techniques and service
  • Food handling & OHS Certificates, essential
  • First Aid Certificate, desirable
  • A keen eye for detail, passion for emerging trends and the ability to update menus
  • A values driven individual who celebrates diversity and inclusion while building a positive, friendly and professional culture
  • Strong communication and interpersonal skills creating a positive team culture
  • Experienced leadership skills with ability to train, manage and inspire a team
  • The ability and commitment to manage the operation
  • Knowledge of budgeting and accounting procedures including planning, forecasting and cost controlling
  • Attention to detail, a passion for cuisine with a strong focus on food quality and presentation
  • Full availability and flexibility to work a 7-day rotating roster weekdays, evenings, weekends and public holidays
  • Excellent personal presentation
  • Full working rights in Australia
