The Venue

Blackbird is proud to garner a reputation as an award-winning restaurant in the Brisbane CBD with stunning views and an impeccable standard of service. Ghanem Group Executive Chef Jake Nicolson takes a critical approach to sourcing the finest local beef, working closely with suppliers, and delivering quality and consistency every time. Our naturally fueled, open wood-fired grill takes center stage at Blackbird, infusing the consistent heat of coal, aromatic woods, and live open flame.

Opportunity

We are seeking a dynamic and experienced Head Sommelier to lead our award-winning wine program at Blackbird. You will oversee the management of our wine list, develop the team's skills around wine, and drive wine sales throughout the venue. The Head Sommelier will report directly to the General Manager and be an integral part of the Venue Management Team, with a secondary reporting line to the Group Sommelier.

Key to your success will be your demonstrated experience in the following areas:

  • Driving sales of wine in the venue and enhancing guest experience by offering tasteful and engaging wine pairings.
  • Creating elevated bespoke wine pairings upon request by guests seeking a premium food and wine degustation experience. 
  • Plan and execute wine-based training plans, incentives, and activations within the venue. 
  • Management of a Venue’s wine list and making relevant and meaningful contributions to the list including:
    • Weekly ordering within stipulated budgets and financial guidelines
    • Regular updates to the venue’s wine list to ensure the menu reflects current stock availability. 
  • Stock management to manage down variances, stock handling, storage, and cellar management. 
  • Compliance with best practice wine service standards.

RECOMMENDED SKILLS/EXPERIENCE

Bar Manager
Sommelier

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS

Successful candidates will have at least 2 years of experience in a similar role and environment, coupled with the following skills and attributes:

  • Significant (Min 2 years) experience as a Sommelier curating and managing an industry-respected wine list.
  • Ability to create tasteful food and wine pairings.
  • Extensive knowledge of the Domestic and International Wine Market: Winemaking, key producers, styles, and regions.
  • Ability to communicate wine knowledge to staff and guests.
  • Demonstrated Leadership abilities and commitment to succeed as part of a management team.
