The Group comprises six well-known F&B venues including the iconic Riverland Bar, The Boatbuilders Yard, Pilgrim, The General Assembly, Bang Bang RC, and our exciting new venture, Hotel Railway.
The venue:
Hotel Railway in Brunswick is a big old building, with a rich and layered history dating back to the 1880s. Redesigned, by Therefore Studio, with modern Brunswick in mind, this phoenix of a hotel is undergoing an extensive renovation including extending the original building and grounds to increase the outdoor space with a huge walled beer garden oasis. It will be an inclusive space for everyone, bringing a new offer to the ever growing and evolving demographic of Brunswick and surrounds.
The venue will have a strong sustainability focus along with generous and quality driven drinking and dining options. The extensive indoor/outdoor space on the ground floor (licensed capacity of 965pax) allows for a multifaceted offering including a Spirits Focussed Bar, Dining Room and a Main Bar that will service the large beer garden.
Hotel Railway offers a generous, quality driven dining experience. The main objective is to recreate the ambience of the quintessential corner pub that offers excellent food.
The menus will showcase the venue’s live fire kitchen, with flavours driven by Mediterranean influences. Vegetables receive equal treatment to fish and meat on the menu - slow roasted or grilled until the sugars have started singing - all delivered with uncluttered simplicity. The menu is seasonal, showcasing local produce and mindful of sustainable practices. Chefs explore preserving and fermentation incorporating other umami flavours from a far.
Please note: You should have a minimum 2 years previous experience in the above or similar roles.
The candidate:
- Demonstrates a positive and customer centric attitude
- A natural leader displaying a hands on approach and dealing with problems by offering practical solutions in a timely manner
- Demonstrates ability to train, mentor, coach and develop high performing teams through outstanding communication and a willingness to hold people accountable
- Strong business acumen with proven record of achieving KPI’s
- Exposure to fine dining or high end, fun-casual kitchens in Australia and overseas – must have mastered the fundamentals of cooking and be experimental with new techniques and trends
- Experience with live fire cooking and passion for vegan/vegetarian dishes
- Interest in fermentation, pickling and preserving
- Knowledge of pizza making
