JOB DESCRIPTION

Ace Hotel Sydney is our first-ever spot in Australia, inhabiting a historic building set in the verve of Surry Hills. Inspired by the neighbourhood’s vibrant rhythm, Ace Sydney is home to a bustling public Lobby alive nearly nightly with DJs and performers, a rebellious art program and a sunken lounge just off the Lobby bar. We’ve also got two distinct restaurants led by award-winning culinary pros, including local legend Chef Mitch Orr. Here at Ace, we are more than just a Hotel as we embrace the city spaces built for gathering and celebrating local culture, food, music and art. This 18-storey hotel was built around the iconic Tyne House inspired by the neighbourhood’s vibrant rhythm as it is designed to operate as an always-evolving call and response with the community we live in - a two way channel for creativity, collaboration and curiosity. About our spaces -

The Food & Beverage Duty Manager role is located on the ground floor and level 1 of the eccentric Ace Hotel, where we have something for everyone starting on the ground floor.

Good Chemistry - Is a breathtaking day-to-night cafe, that yields delicious specialty barista coffee from Mecca, tasty sweets and divine savoury items by day, before transforming into an intimate bar nightly. 

Loam - Our full-table service restaurant has 65 seats, serving breakfast, lunch and dinner seven days a week with dishes encouraged to share.  Here the kitchen team creates masterpieces incorporating seasonal delights with a particular emphasis on veggies as ingredients are sourced from independent farmers & producers. 

The Lobby bar - Somewhere anyone can come and immerse themselves in the smooth ambience our DJ provides paired with craft cocktails, snacks and shareable small plates to ensure a great experience.

Brick, Tyne & Clay - Moving up from the ground floor we have three bespoke private events spaces and private meeting rooms to meet a variety of needs and event styles from conference, banquet & cocktail just to list a few.

REQUIREMENTS

About the Role -

  • This role entails a 5-day rotating roster of am & pm shifts
  • Recruiting, rostering and allocating staff to meet the needs of the business for all designated food & beverage areas
  • Identify training needs and deliver training for the food and beverage team across the restaurant, bar and event spaces
  • Complete daily sales reports maintaining accuracy and resolving any discrepancies in time
  • Ensure all staff adherence to labour guidelines and HIGA legislation
  • Mentor, coach & counsel team members to foster a high-performance service culture within a guest-focused working environment
  • Assist in fostering a positive working environment, with a proactive approach to creating an inclusive and welcoming work culture
  • Create & oversee beverage sales to generate revenue through upselling and understanding market trends
  • Manage the resources of the front of house food and beverage team ensuring optimal productivity while liaising with the back of house operation to ensure flawless performance in all venues
  • Provide effective support and communication to both management and staff in a timely, positive and constructive manner

 

About You - 

  • Previous leadership experience in a multi-venue
  • Previous experience using rostering and operational systems
  • Fundamental knowledge of financial principles and inventory management
  • Passionate and organised individual with an adaptable nature
  • Impressive attention to detail with the ability to accurately prioritise tasks
  • Leads by example, with a positive and hard-working nature
  • Sound computer skills with strong verbal communication
  • Passionate about the customer experience, with great problem-solving skills
