JOB DESCRIPTION

Features golden 26 level tower with 347 accommodation rooms & suites, Mr. Carpano Dining and Bar and Allora Café. The hotel is complemented with direct access to the Melbourne Convention & Exhibition Centre (MCEC), the Southern Hemisphere's largest meeting space and adjacent to the DFO centre, with 180+ retail brands. Mr. Carpano Dining and Bar was named after Italian distiller Antonio Carpano, the inventor of Vermouth in c1796. Our Restaurant is a curated menu of rustic and seasonal Italian dishes.

REQUIREMENTS

About the Role

Novotel Melbourne South Wharf is looking for somebody who is passionate about creating memorable culinary experiences. Reporting to the Head Chef, you will support the Head Chef in leading the Kitchen Team. Key duties include, but are not limited to the following:

  • Providing hands on approach to managing the day to day operations of the Kitchen
  • Developing and creating innovative Italian cuisine styled menus alongside the Head Chef
  • Maximising productivity and controlling food and labour costs
  • Using your creativity and flair to produce high quality dishes that delight our guests
  • Training and development of Kitchen Team Members
  • Ensure that food standards are maintained according to established recipes and standards
  • Keeping a safe and hygienic work environment and understanding food safety standards and HACCP practices
  • Ensuring strick stock roation and minimum wastage

Skills and experience

  • Trade qualifications and relevant experience in a similar role
  • Genuine passion for Food and desire to learn and grow
  • A leadership style that is authentic, engaging and strategic
  • Capable of mentoring and driving the team to achieve excellence
  • Time Management and organisational skills
  • Flexibility to work a variety of shifts including mornings, nights, weekends and holiday periods
