Now, we’re stepping into bold new territory with our first European-inspired restaurant, set to open in one of Sydney’s most iconic buildings at the heart of the CBD. After 13 years of solely working with Spanish wines, this venue will fuse Europe’s best wine regions, as well as Australia.

The Opportunity
We’re seeking an exceptional Sommelier to be part of the wine team, working within our current venues and then transitioning into the new venue around May/ June this year.

  • Operating Hours: Monday to Saturday (closed Sundays)

The Role
You’ll be part of the driving force behind a fine dining destination with an exceptional wine list. However, after running multiple venues with wine lists of around 500 wines, this venue will be around 100. As a Somm, half the job is administration, and less wine means your head space can be focused on sales rather than office work.

RECOMMENDED SKILLS/EXPERIENCE

Sommelier

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS


At least 2 years working in a similar role.

  • Full working rights.
  • A deep understanding of fine dining and the fast-paced Sydney CBD dining scene—lunch rushes to evening elegance.

  • Proven skills in team training, wine tasting and masterclasses with staff and customers

  • Sharp attention to detail and an unrelenting pursuit of perfection.

  • Expertise in cost control, supplier relationships, and KPI financials on sales

  • Your candidacy is helped if you’ve worked in hatted or award-winning restaurants here or overseas.
