The Venue

Expected to open in September 2024, Lúc Lắc is breathtaking at first sight. A lush, indoor-outdoor, tropical setting is splendidly conspicuous on arrival and a striking addition to its premier location at The Star, on The Terrace, Level 4. Exciting flavours inspired by Vietnam, Thailand, Singapore, and a touch of French permeates the menus, while a central bar and late-night DJ entertainment enable guests to soak up the after-dinner ambiance and spirited vibes.

Open from lunch to late night, Lúc Lắc’s A La Carte and Banquet menus are designed to share, alongside an extensive beverage offering, all of which are abundantly colourful, aromatic and herbaceous, and brimful of Queensland produce and unique ingredients.

Guests will enjoy an array of delicious snacks, fragrant salads, wok-tossed dishes, slow-braised clay-pot curries, grilled meats and seafood, and playful desserts.

We are looking for an accomplished Opening Bar Manager to join our team at this pioneering venue. If you're a seasoned bar professional with a focus on customer service and a passion for delivering premium cocktail and beverage experiences, this unique opportunity is perfect for you. You will lead our efforts to create a standout bar atmosphere, collaborating with our Director of Beverage and Group Bars Manager to oversee the bar operations and team at our innovative establishment.

As the Opening Bar Manager, you will be responsible for the overall management of our bar operations, ensuring efficient service of both alcoholic and non-alcoholic beverages to our guests. Reporting directly to the Venue Manager and working closely with the Group Beverage Team, you will play a pivotal role in delivering a welcoming, world-class bar experience. Join us on this journey where your expertise will shape an exceptional bar service for our guests

Key to your success will be your demonstrated experience in the following areas:

  • Undertake normal bartender duties and supervise all bartenders and bar backs and bar floor staff to provide excellent customer service.
  • In conjunction with your Venue Manager, create effective rosters for bar operations and quickly resolve any staffing issues to ensure the bar is appropriately and effectively staffed. 
  • Monitor and order alcoholic stock and appropriate glassware levels required for the bar in liaison with the Group Bar Manager. 
  • Develop and maintain the Bar and/or Restaurant cocktail lists and functions packages, with the approval from the Group Bar Manager, Bar and Beverage Manager and Venue Manager. 
  • POS – ensure all products are up to date and entered with correct recipes in BOH system
  • Receiving orders and invoicing – Stock to be checked and singed on the day of delivery. All Invoices to be completed and filed before COB of the same week purchased.
  • Stocktake – Venue stocktake to be done monthly as set out by Loss Preventions and Compliance Manager. Liquor Stocktake Analysis to be done in conjunction with Venue Manager. Weekly follow ups may be required.
  • Hire and train staff to provide excellent service to customers. Working with and training front of house team members on existing cocktails or food products, as well as selling techniques and any other necessary beverage training.
  • In conjunction with your Venue Manager, keep up to date with Liquor Licensing and legislation changes, ensuring the bar team upholds RSA at all times.
  • Ensuring all contractual obligations set by the Ghanem Group are upheld.
  • Set and enforce quality and safety controls. 
  • Develop and maintain appropriate work instruction and procedures to support optimal bar operations.
  • Act as an escalation point for the handling of customer concerns/complaints.
  • Ensure bar operations are integrated and complement the overall venue operations.
  • Any additional duties within your capability as directed by the Venue Manager and Group Bar Manager.

Successful candidates will have at least 2 years of experience in a similar role and environment, coupled with the following skills and attributes:

  • Demonstrated experience as a Bar Manager for similar size venue
  • Exceptional experience as a bartender
  • Superior communication and interpersonal skills.
  • Ability to diffuse tense situations and resolve conflicts.
  • Demonstrated ability to manage and lead a team.
  • Understanding and experience adhering to health and safety standards and regulations
  • Unquestionable commitment to, confidentiality and professionalism
