JimmyRum is Victoria’s first dedicated craft rum distillery with an audacious goal, to change the way Australians think about rum. Uncomplicated, unpretentious, and unruly, we've created JimmyRum cane spirits & rum's that are distinctive, downright delicious and now nationally and internationally award winning. 

We're a rum distillery with a premium cocktail bar and restaurant,  serving up to 120 patrons in our cellar door and rum garden. Showcasing our rum and cane spirit products with amazing cocktails, next level shared food and amazing rum experiences. 

With a venue that is casual and relaxed, child & pet friendly, it’s a welcoming space for locals and visitors alike, often having different  entertainment lined up all weekend. 

Our distillery is open seven days a week for tastings. Our bar and restaurant is open from Thursday to Sunday. During peak season, we trade all days of the week!

The role 

• Our little Mornington Peninsula Craft Rum distillery is growing fast and we need a bar manager and bar lead
• Someone to “Run it like they own it” or more in line with Jimmy's philosophy “Run with it like you stole it"

With rum starting to boom in the craft space, this is a very exciting time to be joining the rum world and our fun and dynamic crew. You will require passion and enthusiasm for all things craft (and hopefully an amazing love for rum, if not… we’ll change that!). We love our venue and brand and we love doing the extra miles for great service and an excellent rum experience. 

You’ll be responsible for 

• Managing all behind the bar operations
• Stock ordering and managing
• Cocktail design, balance and flair
• Bar staff training and instilling an enthusastic, hard working, can do and importantly, fun culture behind the bar.
• Maintaining consistancy and quaity of all drinks, to match and showcase our product.
• Budgets and costings for all drinks.
• Par level management in accordance with season. 
• Seasonal cocktail adjustments, working with fresh locally sourced produce. 

You’ll need to have 

• Valid Victorian RSA (VGCCC) or Nationally recoginsed RSA.
• 2 + years of bar management experience preffered.
• Mixology experience would be a bonus.
