Ace Hotel Sydney is our first-ever spot in Australia, set in the verve of Surry Hills. Inspired by the neighbourhood's vibrant rhythm, Ace Sydney is home to a bustling public Lobby alive nearly nightly with DJs and performers, a rebellious art program and sunken lounge just off the Lobby bar. We’ve also got three distinct restaurants led by award-winning culinary pros, including celebrated Copenhagen-based Australian chef, Beau Clugston's  Kiln; our oasis for fresh, seasonal fare called LOAM; and a day-to-night laneway café, Good Chemistry. About Kiln

Recently reopened with a fresh new menu, Beau Clugston takes to reinvent the iconic location upon the 18th floor of one of Sydney's renowned hotels. Kiln offers a truly elevated dining experience that stands out in the city’s vibrant culinary scene. With open terraces, stunning views, an open kitchen featuring a woodfire hearth, and spaces such as a bar, lounge, and private dining area, where DJ beats amplify the vibrant atmosphere. 

Our dishes capture the essence of the open flame, smoke, and smoulder from the wood-burning grill. Designed for sharing, the menu evolves with the seasons, featuring sustainably sourced ingredients. Seating up to 120 guests, offering both restaurant and bar areas, Kiln provides the ideal setting to relax and soak in the atmosphere even after dining.

The Gig

We have a philosophy that everyone is welcome, which means you will welcome a diverse and fascinating cross-section of the community. Top priority for us will be delivering our guests a first class, generous and down to earth service. Your role will include, but not be limited to:

  • Working full-time on a 5-day rotating roster consisting of lunch, dinner & weekend shifts.
  • Support the Restaurant Manager in leading daily restaurant operations with consistency and flair.
  • Oversee floor service, ensuring smooth flow and top-tier guest experiences during all shifts.
  • Manage rosters, staffing levels, and support recruitment to match business needs and budget targets.
  • Lead pre-shift briefings, keep the team aligned, and bring energy to each service.
  • Maintain restaurant presentation, ambience, cleanliness, and compliance with WHS standards.
  • Supervise and coach the team on service, product knowledge, and operational excellence.
  • Liaise with the kitchen and bar teams to ensure menu execution and service flow are seamless.
  • Handle guest inquiries, feedback, and service recovery with professionalism and warmth.
  • Oversee inventory, ordering, stock control, and cost management.
  • Drive KPIs, assist in daily reporting, and support profitability strategies.
  • Collaborate on team training, performance reviews, and ongoing development.
  • Be across liquor licensing, food safety, and workplace compliance at all times.

RECOMMENDED SKILLS/EXPERIENCE

Sommelier
Food & Beverage Supervisor

Please note: You should have a minimum up to 2 years previous experience in the above or similar roles.


REQUIREMENTS

About you

  • You’ve got a strong foundation in premium restaurant operations, with a cool head and a hands-on leadership style.
  • Sommelier experience is highly desirable — you’re confident talking wine lists, curating pairings, and mentoring staff on beverage knowledge.
  • You’ve got a passion for great food, great drinks, and even better service — and you know how to bring it all together.
  • Detail-oriented and deadline-driven — from staff rostering to stock control, you know how to keep a tight ship.
  • A confident communicator with a natural ability to inspire, coach and lead from the floor.
  • You’re across compliance, food safety, liquor licensing, and workplace health & safety — and you uphold the highest standards, always.
  • You thrive in a fast-paced, high-energy service environment, and know how to turn challenges into opportunities.
  • Open to evening, weekend and rotating shifts — you’re flexible, reliable, and thrive when the room is buzzing.
  • Previous experience in a hatted restaurant is highly desirable.
  • Bonus points if you love music, design, and the little things that create a lasting guest impression.
